I have been learning how to make sourdough bread since Nov 2016. My results have not been that remarkable, self taught and watched YouTube videos.
After enrolling in SourdoughU, I learned that I was not doing a long enough bulk rise. I realized I need to pay closer attention to the environment temperatures and dough temp. His demo on how the dough reacts at different levels when pressed was brilliant as was his easy to understand explanation of how to calculate
hydration percentages. His instructions are well paced and at the right level for a lay person just starting out on the sourdough journey and are very captivating (for sure not boring!). My sourdough baking level jumped up to a whole new level after taking Mike’s baking course. His excellent videos from A-Z on sourdough baking is well worth the time and the handouts are handy. I am so grateful!
